Carrot Casserole

This Finnish recipe is a great way to use carrots. It's simple and makes an excellent side dish. Here's the recipe:

1 cup rice, cooked
2 cups milk
5 carrots, peeled and shredded
1 teaspoon salt
1 tablespoon brown sugar
2 eggs
3 tablespoons butter, melted
1/3 cup breadcrumbs

Preheat the oven to 190⁰ C.
In a bowl combine the rice, milk, carrots, salt, brown sugar and eggs.
Butter a casserole.
Pour the carrot mixture into the casserole.
Combine the breadcrumbs with the melted butter.
Sprinkle over the carrot mixture.
Bake for 40 minutes or until the top is light brown.
