Cream of Carrot

Cream of carrot is delicious and easy to prepare. Here's a French recipe:

2 tablespoons butter
1 onion, peeled and chopped
5 carrots, peeled and sliced
1 potato, peeled and sliced
1 clove garlic, crushed
4 cups chicken stock
1 teaspoon pepper
1/4 cup cream
salt
chives, chopped

Melt the butter and cook the onion, carrots, potato and garlic for about five minutes.
Add the chicken stock and pepper and bring to a boil.
Turn down the heat, cover and cook for 30 minutes.
Remove the soup from the heat, cook and puree in a blender.
Return to the pot and add cream and salt.
Heat and serve with chopped chives.
