Lemon Potatoes

Lemon potatoes are a fantastic way to prepare potatoes. This Greek recipe is great with lamb. Here is the recipe:

8 potatoes, peeled
1/2 cup fresh lemon juice
1/3 cup olive oil
2 garlic cloves, chopped
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup chicken stock

Peel potatoes and cup in half.
Let them stand in water while preparing the sauce.
Combine all the other ingredients in a bowl .
Dry the potatoes and add to the bowl.
Marinate for two hours.
Preheat oven to 200 degrees Celsius.
Roast the potatoes for about one hour while turning occasionally.
There should be plenty of sauce left over after roasting.

If the potatoes are very large, you can quarter them. The chicken stock can be replaced with lamb stock.
