Creme Anglaise is a French custard that's easy to prepare. This recipe uses milk, but it can also be made with cream. Here's the French recipe:
4 egg yolks
1/4 cup sugar
1 teaspoon vanilla extract
1 1/2 cups milk, hot
In a saucepan whisk the egg yolks, sugar and vanilla.
Gradually add hot milk while whisking.
Cook over low heat.
Stir constantly until the mixture thickens.
Refrigerate.
This can be served alone or with fruit and crepes.
